Easy-to-follow Steps:
1. Combine the glutinous rice flour, cornstarch (or corn flour) and water in a mixing bowl.
2. Knead it in a bowl of flat surface to form a ball of dough.
3. Grab a pingpong-size dough, create a dent with your thumb and fill it up with chocolate chips (approximately 3 to 5 pieces per mochi suffice).
4. Wrap the dough around the chocolate chips, and form into a ball. Make sure to seal well to prevent the mochi from “bursting” when frying.
5. Prepare coconut oil in a pan and fill the pan with enough oil to cover your mochi balls.
6. When coconut oil is hot enough, simmer the mochi balls inside for about a minute until the outside turns crispy.
7. Remove and set them aside for 3-5 minutes to cool down and to drain the oil.
8. Enjoy immediately after so that the chocolate still flows!
